A Croydon chef has been named as a finalist for Best Takeaway Chef in Britain by the British Takeaway Awards (BTAs).

Mike Springer of Big Mike’s Calypso Kitchen in Croydon was selected as one of four finalists from hundreds of entries.

The chosen chefs were invited to Cactus Kitchens in London, the home of BBC1’s Saturday Kitchen and Michel Roux Jr’s cookery school on November 15 to cook the dish their customers love for a panel of expert judges.

The panel included celebrity chef Ainsley Harriot and businesswoman and star of Dragon’s Den Sarah Willingham.

Mike’s signature dish is Bajan fish cakes with a coconut and shell fish sauce.

He said: “It would be rather special to win against the high quality dishes from the other chefs. 

“It’s been a great experience and it definitely motivates me to push my culinary expertise even further. 

“If we win, we will be celebrating with the rest of South London as we’d have helped put Caribbean food on the map.”

The award will be presented to the winner at the BTAs, which will be hosted by comedian Rob Brydon, on December 5 at the Savoy in London.

The winner will receive £2,500.
