Ingredients:
450g of flour
1.5 sachets of easy blend yeast
1 tsp salt
1.5 tsp baking soda
water as necessary
butter (for greasing)
Method
Sift the flour, salt, baking soda and yeast into a bowl.
Gradually mix in enough water to make a batter with the consistency of thick glue.
Cover it and stick it in a warm place for 20 mins for the yeast to activate and to rise a little.
Grease a few metal rings with the butter.
Once the batter has risen, grease a heavy-based pan and put over a medium heat, and place the metal rings in it.
Ladle in about 1/2 an inch of the batter.
Remove the crumpets from the rings when ready.
Cook briefly on top side (Makes 10-12).
